Looking for a flourless brownie recipe that’s also packed with protein?  This is a delicious recipe designed to help boost energy and heal the gut. The brownie includes collagen powder which can be helpful for gut healing. Soft and moist this is delicious as a snack or served with yogurt. Make up a big batch as these freeze well too. Ideal for a pre or post workout snack.

Protein Chocolate Brownies

What’s good about it?

This is a fabulous grain free, paleo recipe with the additional protein thanks to the collagen powder. You could use a chocolate protein powder instead if you wish or leave it out altogether.  The addition of nut butter also provides plenty of healthy fats, protein as well as key minerals like iron, magnesium and zinc.

 

  1. Preheat the oven to 180C, gas mark 4. Grease and line a shallow baking tin. In a food processor blend the nut butter, eggs and coconut syrup.
  2. Add the remaining ingredients except the chocolate and beat until smooth. Stir in the chocolate chips Spoon the mixture into the baking tray.
  3. Bake in the oven for around 20 minutes or until cooked through. Allow to cool in the tin then cut into bars.

130g cashew nut butter

3 large organic eggs

120g coconut syrup or maple syrup

1tbsp vanilla extract

1tsp ground cinnamon

1tsp lemon juice

30g raw cacao powder

30g Collagen powder or vanilla protein powder

3/4 tsp bicarbonate of soda

60g chopped chocolate or sugar free chocolate chips
