What’s good about it?
This is a fabulous grain free, paleo recipe with the additional protein thanks to the collagen powder. You could use a chocolate protein powder instead if you wish or leave it out altogether. The addition of nut butter also provides plenty of healthy fats, protein as well as key minerals like iron, magnesium and zinc.
- Preheat the oven to 180C, gas mark 4. Grease and line a shallow baking tin. In a food processor blend the nut butter, eggs and coconut syrup.
- Add the remaining ingredients except the chocolate and beat until smooth. Stir in the chocolate chips Spoon the mixture into the baking tray.
- Bake in the oven for around 20 minutes or until cooked through. Allow to cool in the tin then cut into bars.
