Gingered Turkey Patties

This is a wonderful light paleo dish. Little patties with Asian spices make a perfect breakfast dish or light meal. Often I make up a large batch of these and serve them cold with salsa for lunch. They are ideal for packed lunches too.  You could serve them in Little Gem lettuce leaves as a wrap to make this a low carb snack too.

Ingredients

INGREDIENTS

Makes about 10-12 patties

  • 400g turkey mince
  • 3tbsp fish sauce
  • 2cm piece of fresh root ginger
  • 2 spring onions, chopped
  • 1 garlic clove, crushed
  • 1tbsp coconut aminos or tamari, soy sauce
  • Coconut oil for frying
  •  Salad leaves to serve

Instructions

INSTRUCTIONS

  1. Place all the ingredients in a food processor and process until thoroughly combined.
  2. Shape into little patties.
  3. Heat some coconut oil in a frying pan and brown the patties on each side for 2-3 minutes until cooked through.
  4. Drain on kitchen paper. Serve with salad or salsa
