A deliciously simple dessert – packed with protein making this ideal as a healthy snack, dessert or breakfast option. The addition of acai powder provides plenty of protective antioxidants while the coconut oil is a great source of healthy fats and lauric acid to support immune function. I often use a bag of mixed berries for speed and ease. So simple and really scrummy

What’s good about it?
This filling dessert is naturally sweet and protein packed with the addition of protein powder and nuts. Acai berry powder is exceptionally high in antioxidants and vitamin C to protect the cells from damage. Wonderful for skin too as vitamin C is essential for the production of collagen.
- If using frozen berries allow them to thaw for a couple of minutes to make them easier to blend.
- Place all the ingredients in a high speed blender and process until smooth and creamy.
- Spoon the mousse into little glasses or bowls.
- Top with a few berries if wished to serve.
