Looking for a festive treat that would be perfect to gift? These wonderful gluten free cookies are easy to make and ideal for children to help decorate.
Snowman Cookies
- Sift the flour, cornflour, xanthum gum and salt in a bowl. Mix well.
- In a food processor beat the sugar and butter together until soft.
- Add the egg and vanilla extract.
- Tip in the flour mixture and beat well – it should come together to form a soft dough
- Wrap the dough in cling, flatten it, then chill it in the refrigerator so it firms up. You may only need about 20 minutes
- Preheat the oven to 180C, Gas mark 4.
- Use cling film to roll out the dough then cut out circular cookies.
- You can re-roll this dough to cut out more cookies
- Place on a lined baking sheet and bake for around 12 minutes. Allow to cool completely before decorating.
- Use white royal icing over the cookies then place a marshmallow on the icing and allow it to set. Pipe eyes, nose, arms once the icing has hardened.
- Store in an airtight container for 4-5 days.

Instead of snowman cookies you could use this cookie dough to cut out other festive shapes and decorate for the tree or as gifts. Add some lemon zest for a wonderful tang or cinnamon for a warming spiced cooked.
