I love baking with my children. But rather than sugar laden biscuits we will make a batch of paleo cookies. Made with almond flour and flavoured with raw cacao and lucuma these are perfect for an afternoon snack. For an extra protein hit my recipe includes protein powder – we like to use VEGA chocolate protein powder or Vital Pea Protein. For a special treat we coat them in dairy free chocolate and top with chopped nuts – a fabulous cookie enjoyed by everyone.
Paleo Chocolate Coated Biscuits

INSTRUCTIONS
- In a food processor, mix the almond flour with the arrowroot powder, raw cacao powder, lucuma and protein powder
- Blend in the rest of the ingredients and add a little water to form a slightly damp dough.
- Roll the dough between two pieces of parchment paper
- Stamp out rounds. Place on a lined baking tray and bake for 15 minutes until lightly golden.
- Cool on a wire rack.
- Place the chopped nuts on a tray. Place the melted chocolate in a small bowl.
- Dip one side of each biscuit in the melted chocolate and then press into the nuts. Leave to set.

- 120g almond flour
- 30g arrowroot powder
- 30g raw cacao powder
- 1 scoop of protein powder
- 1tbsp lucuma powder
- 1tbsp syrup from a jar of stem ginger
- 100g coconut oil melted
- 30g xylitol, ground up until fine
- Little water to blend
Coating
- 250g dairy free chocolate, melted
- 50g chopped nuts
