These warming lightly spiced cookies are perfect when energy levels are low. The addition of almond flour creates a rich tasting high protein biscuit to help stabilise blood sugar and keep energy levels high.

What’s good about it?
Almond flour is incredibly nutritious. It’s particularly rich in vitamin E and magnesium and provides plenty of protein and fibre to support blood sugar levels.
- Preheat the oven to 180C, gas mark 4
- Combine dry ingredients in a large bowl.
- Stir together the wet ingredients in a smaller bowl then mix into the dry ingredients.
- Spoon the mixture onto parchment paper lined baking sheet 1 tablespoon at a time and gently press. Space a little apart.
- Bake for 10 minutes until golden. Cool on the tray before removing.
Did you Know?
If you cannot find almond flour you can use a combination of ground almonds and gluten free plain flour.

¼ teaspoon sea salt
½ teaspoon baking soda
1 teaspoon ground ginger
1tsp grated fresh root ginger
½ teaspoon cinnamon
60g / 2oz / ¼ cup coconut oil
1tbsp black strap molasses
2tbsp maple syrup
