Crunchy tangy fritters accompanied with a wonderful sweet dipping sauce makes this a quick and easy lunch or dinner dish. The fritters can be cooked in advance and reheated in the oven if needed. We keep these gluten free by using a gluten free flour mix or rice flour.

INSTRUCTIONS
- Make the sweet mango dipping sauce. Place all the ingredients into a food processor and blend until it forms a chunky sauce. Chill until needed.
- Place the flour, egg yolks, salt, paprika and coconut milk in a bowl and beat to form a smooth batter. Stir in the shallots, garlic, tomato and prawns. Whisk the egg whites until stiff then fold into the batter.
- Heat the oil in a frying pan. When hot place spoonfuls of the batter into the pan and fry the fritters on each side for 2 minutes until golden and crisp. Drain on kitchen paper. Repeat with the remaining batter. Serve warm with the mango dipping sauce.

Fritters
- 125ml / 4floz Coconut milk
- 3 eggs separated
- Pinch of salt
- 75g / 2 ¾ oz gluten free plain flour or rice flour
- 1/2tsp smoked paprika
- 1 shallot, finely chopped
- 2 tomatoes, deseeded and chopped
- 1 garlic clove, crushed
- 225g / 8oz raw prawns, chopped
- 2tbsp coconut butter
Sweet Mango Dipping Sauce
- 1 red pepper, chopped
- 1 ripe mango, chopped
- Pinch of Chili flakes
- 10 pitted dates, chopped
- 3 garlic cloves, crushed
- 1tsp grated root ginger
- 2tsp apple cider vinegar
- Pinch of salt
