Recently I have been creating a range of amazing recipes for CherryActive.  CherryActive have a range of delicious super concentrated juices – blueberry, cherry and beetroot. Packed with antioxidants they are ideal for pre and post workout boosts but equally scrummy added to a whole range of recipes. In addition they also sell dried blueberries and cherries which I have been using in sweet and savoury recipes. My boys absolutely loved this Cherry Chia Pudding. In fact I have had numerous requests to keep making more. Chia is such an amazing seed – packed with soluble fibre, healthy fats, protein it makes an ideal food to keep blood sugar balanced preventing cravings and energy dips. A great breakfast option or delicious snack.

Chia Cherry Layered Pudding

What’s good about it?

Chia seeds are the ultimate fast food – this recipe requires minimum preparation making it perfect for a speedy breakfast on the go. Chia seeds are a great source of omega 3 fats, protein and soluble fibre making them ideal for supporting energy levels through the morning.

INSTRUCTION

  1. Place the dried cherries in a little warm water and soak for 15 minutes. Drain.
  2. In a bowl, whisk together the coconut milk, almond milk and chia seeds. Leave to soak in the fridge overnight
  3. Place the cherries, lemon juice and dried cherries in a pan and simmer gently to soften. Allow to cool.
  4. In the morning stir the chia pudding. Layer in glasses with the cherry compote.
  5. Top with a little of the cherry compote and coconut flakes to serve

Did you Know?

Chia seed puddings are so versatile and you can use any type of fruit to flavour the puddings. Try a tropical flavour using coconut milk and mango pieces or something more warming for the winter with poached plums and cinnamon.  You can also use chia seeds as an egg replacer – simply soak 1tbsp chia seeds in 2tbsp water for 10 minutes then use to replace one egg in recipes.

100ml almond milk

6 tbsp chia seeds

30g dried cherries

200g fresh or frozen pitted cherries

1tbsp lemon juice

Coconut flakes to garnish
