These delicious little chocolate bites are perfect for that energy pick me up or post workout snack. Without added sugars or syrups these are ideal for an indulgent tasting treat without any of the guilt. Choose a dark chocolate for a richer, more satisfying taste. Keep it vegan by using a vegan chocolate protein powder if needed. I used peanut butter in the mix but you can use any nut butter – hazelnut butter would be particularly good.

Chocolate Protein Hazelnut Bites

What’s Good About It?

Ideal for sugar dips – these protein bites are a great filling snack – the combination of fats from the nut butter and the protein powder will help stabilise blood sugar and keep energy levels balanced.

  1. Place the chocolate and coconut oil in a small pan. Heat gently and stir all the time until melted.
  2. Add the remaining ingredients except the hazelnuts and stir into the warm chocolate beating well to combine.
  3. Place the mixture in a bowl and chill to firm up. Allow about 30 minutes
  4. Place the hazelnuts on a tray.
  5. Once firm take small spoonfuls of the mixture and roll into balls. Roll the balls in the hazelnuts pressing lightly so they stick to the balls. Place on a tray and chill until needed.
  6. These will keep in the fridge for up to 1 week.

 

COOK EXPERT Instructions

  1. Place the chocolate and coconut oil in the metal bowl. Select EXPERT mode 2 minutes / speed 2A/80C. Check to see that it has all melted – if not repeat. Use spatula to scrape down the sides if needed.
  2. Add the rest of the ingredients except the hazelnuts. Select EXPERT mode 2 minutes / speed 3/ 50C – your mixture should now be combined.
  3. Place the mixture into a bowl and chill to firm up for about 30 minutes
  4. Place the hazelnuts on a tray.
  5. Once firm take small spoonfuls of the mixture and roll into balls. Roll the balls in the hazelnuts pressing lightly so they stick to the balls. Place on a tray and chill until needed.
  6. These will keep in the fridge for up to 1 week.
