Want a simple pancake recipe with just a handful of ingredients?  These are budget friendly no fuss pancakes naturally sweetened with banana. These little blinis are wonderful served with a little caramel sauce or nut butter and fresh fruit or yogurt. You can replace the oats with gluten free flour if wished

Gluten Free Nutty Banana Pancakes

Time 5 minutes preparation plus 10 minutes cooking time

Serves 2 or 1 hungry student


What’s good about it?

Using banana in the batter provides natural sweetness as well as plenty of fibre for digestive health. Make use of ripe bananas in this recipe. You can make up a batch and either freeze these or keep them in the fridge for eating later in the day as a snack.

 

  1. Simply place all the ingredients in a nutri bullet or blender and process to form a smooth batter. Alternatively mash up the banana and beat in the remaining ingredients including the olive oil to create a thick batter.
  2. Heat a frying pan over a medium heat with a little coconut oil or olive oil.  Pour spoonfuls of the batter into the frying pan. Wait for the top to bubble slightly, before flipping over and browning on the other side.  Repeat with the remaining batter.
  3.  Serve with your choice of toppings

 

Did You Know?

You could add a scoop of protein powder to this mixture if wished. If you need to thin the batter slightly add a spoonful of yogurt or milk. Other flavourings could include cocoa powder, cinnamon or nut butter.

Makes 4 blinis

 

1 ripe banana

3 tablespoons / 1/3 cup or 45g gluten free oats

1 large egg, beaten

1tbsp olive oil

Additional Olive oil or Coconut oil for frying

To serve: lemon juice, xylitol, nut butter, yogurt, coconut or almond yogurt, sliced banana or toppings of your choice
