This is such a simple option for a breakfast or pre /post workout snack. I like to prepare these the night before so that there is very little to do in the morning. I’m not actually good with coffee so I use some dandelion coffee granules in this recipe but you could use instant coffee as an alternative. For a protein boost I like to add a quality chocolate protein powder but you can use raw cacao powder instead. Chia seeds do contain protein as well – 28g / 1oz contains around 4g protein plus they have omega 3 fats and fibre – this means they are great for sustaining energy levels and keeping blood sugar levels balanced through the morning. Rather than adding honey or dates I like to use xylitol or stevia to keep the sugar low.

What’s good about it?
A great combination of slow releasing carbs, protein and healthy fats makes this an energy boosting recipe – perfect for breakfast or healthy snack. Pack it in a shaker bottle overnight and take it with you to work – simply eat with a spoon when hungry.
- Dissolve the dandelion coffee granules or coffee in 1tbsp hot water.
- Place the almond milk, chocolate protein powder, xylitol, dandelion coffee liquid, vanilla and pinch of salt in a blender and process until smooth.
- Pour the mixture into a jug and stir in the chia seeds. Place in the fridge overnight.
- In the morning spoon into bowls or glasses and top with a few berries if wished.
Dandelion root is well known as a liver and gallbladder tonic. It can help to stimulate bile production which is important for fat emulsification and digestion. Rich in antioxidants it can help protect the liver from free radical damage.
