Baked desserts are so warming and comforting. This is a simple batter based baked sweet treat that is easily adaptable depending on what fruit you have available. I often make use of bags of frozen berries or pitted cherries to whizz up this treat for my children. You can also add in some vanilla protein powder to increase the protein content which makes it an ideal energising breakfast option too.

What’s good about it?
Cherries contain fibre, vitamin C, carotenoids, and anthocyanins, each of which may help play a role in cancer prevention, immune support and skin health. Cherries are also known to reduce inflammation and your risk of gout.
- Lightly grease a baking dish
- In a food processor, mix all the ingredients to form a thick batter
- Scatter the fruit over the bottom of the dish and pour over the batter
- Bake at 180C, gas mark 4 for 30 minutes, until clafoutis is set in the middle and top is lightly golden. Serve hot or cold.
Almond flour is also rich in vitamins and minerals, including iron, riboflavin, magnesium, potassium, calcium and vitamin E. Compared with other nuts, almonds provide the most calcium and are beneficial for heart health and lowering cholesterol.
