Paleo Protein Pancakes

Overview

Makes about 8 pancakes

Preparation time: 5 minutes

Cooking time: 5-7 minutes

What’s Good About It?

Using almond flour and protein powder is a great way to increase the protein content of your pancakes. Almond flour is not only a good protein option but also rich in manganese, vitamin E and monounsaturated fats as well as fibre.

  1. Simply place all the ingredients in a blender and process until smooth
  2. Heat oil or butter in a frying pan over a medium heat. Once hot pour spoonfuls of the batter into the pan to make little pancakes. Cook until the edges begin to turn golden, about 1 minute then flip over and cook briefly on the otherside.
  3. Repeat with the remaining batter.
  4. Serve with maple syrup and grated chocolate.

Did You Know?

Adding banana is a great way to naturally sweeten these pancakes. You could use 100g apple puree instead of the banana.

50g almond flour

60g arrowroot or tapioca flour

1 scoop (30g) chocolate protein powder

1 banana

2 eggs

1tsp baking powder

Splash of almond milk
