This is a perfect side dish or light lunch. Roasting cauliflower really enriches its flavour and sweetness particularly when tossed with spices. The Tahini dressing is wonderful rich and creamy and a perfect accompanient to the dish. You can also use this dressing on a wide range of salads and bean dishes too.

What’s good about it?
Tahini (made from sesame seed paste) is a good source of healthy fats, calcium, iron, zinc, copper and selenium.

Preheat oven to 200C, gas mark 6.

In a large bowl, toss the cauliflower florets with the olive oil, spices, salt and pepper until coated.

Spread the cauliflower out onto a large baking tray.

Roast until crispy and golden brown, about 45 minutes, stirring occasionally.

Meanwhile make the tahini sauce.Simply mix all the ingredients together and season to taste. If too thick add a little extra water.
- Serve the cauliflower with salad and the tahini dressing.

You can replace the cauliflower florets with broccoli florets or chunks of butternut squash.
Roasted Cauliflower
1 medium cauliflower ( cut into large florets)
3 Tbsp extra virgin olive oil
Sea salt and black pepper
1/2 tsp ground turmeric
1/2 tsp smoked paprika
Tahini Dressing
1 garlic clove crushed
Juice of 1/2 a lemon
3 Tbsp tahini
1 Tbsp water
2-3tbsp coconut yogurt
Salt and pepper to taste
