Looking for a festive treat that would be perfect to gift? These wonderful gluten free cookies are easy to make and ideal for children to help decorate.

Snowman Cookies


  1. Sift the flour, cornflour, xanthum gum and salt in a bowl. Mix well.
  2. In a food processor beat the sugar and butter together until soft.
  3. Add the egg and vanilla extract.
  4. Tip in the flour mixture and beat well – it should come together to form a soft dough
  5. Wrap the dough in cling, flatten it, then chill it in the refrigerator so it firms up. You may only need about 20 minutes
  6. Preheat the oven to 180C, Gas mark 4.
  7. Use cling film to roll out the dough then cut out circular cookies.
  8. You can re-roll this dough to cut out more cookies
  9. Place on a lined baking sheet and bake for around 12 minutes. Allow to cool completely before decorating.
  10. Use white royal icing over the cookies then place a marshmallow on the icing and allow it to set. Pipe eyes, nose, arms once the icing has hardened.
  11. Store in an airtight container for 4-5 days.

Did You Know?

Instead of snowman cookies you could use this cookie dough to cut out other festive shapes and decorate for the tree or as gifts. Add some lemon zest for a wonderful tang or cinnamon for a warming spiced cooked.

240g gluten free plain flour

30g cornflour

120g butter, cut into small pieces

100g xylitol or caster sugar
