Steamed Elderflower & Lemon Puddings

What’s Good About It?

A light and flavoursome steamed pudding. The use of xylitol with the cordial keeps the sugar content down compared to traditional steamed puddings.

 

  1. Place all the ingredients in a food processor and beat until smooth
  2. Mix together the lemon juice and elderflower cordial. Pour a little into the base of each mug
  3. Divide the mixture between four steam proof / oven proof mugs or small bowls
  4. Place the mugs in a steamer and steam for 25 minutes until cooked through.
  5. Serve straight from the mugs with a little elderflower / lemon mixture poured over and coconut yogurt if wished.

 

If using the CE MAGIMIX

  1. Place all the ingredients in the metal bowl. Select EXPERT 2 minutes / SPEED 12 / no heat
  2. Scrap down the sides with a spatula and repeat the beating if needed to incorporate.
  3. Mix together the lemon juice and elderflower cordial. Pour a little into the base of each mug
  4. Divide the batter between the mugs and rinse out the metal bowl.
  5. Pour 500ml water in the metal bowl. Attach the XXL steamer. Place the mugs in the steamer and place on the lid
  6. Select Steamer XXL setting and let it run for the 25 minutes
  7. Serve straight from the mugs with a little elderflower / lemon mixture poured over and coconut yogurt if wished.

Did You Know?

You could also bake these in the oven (make sure your mugs / bowls are oven proof) at 180C for 20-25 minutes

For the Puddings

175g dairy free spread

50g coconut yogurt

75g xylitol

100g gluten free self raising flour

75g ground almonds

1tsp baking powder

3 eggs

Juice and zest of 1 lemon

40ml elderflower cordial

 

Lemon and Elderflower Drizzle

Juice of 1 lemon

3tbsp Elderflower cordial
