What’s good about it?
Spinach is an extremely nutrient-rich vegetable. It contains high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron and calcium. It is also packed with protective antioxidants including lutein, kaempferol, nitrates, quercetin and zeaxanthin.
- Cut strawberries in half and arrange over the spinach with the rest of the salad ingredients.
- Combine dressing ingredients in blender or food processor and process until smooth.
- Just before serving, pour over salad and toss well.

225g baby spinach leaves
150g fresh strawberries halved or chopped
60g chopped walnuts
2 stalks celery finely sliced
1/3 cucumber finely sliced
Handful of alfalfa sprouts or bean sprouts, optional
Dressing:
1 Tbsp. sesame seeds
2 tsp poppy seeds
1 spring onion finely sliced
4tbsp extra virgin olive oil
2tbsp balsamic vinegar
Salt and pepper to taste
