The combination of sharp lime and rich creamy avocado makes an incredible creamy dessert. Coconut, cacao butter and lime are a winning combination and give this tart a light, tropical flavour. The tart can also be frozen to create a wonderful iced dessert too.

INSTRUCTIONS
- Grind the almonds in a food processor. Add the rest of the base ingredients and process until it begins to stick together.
- Press the mixture into a greased spring form pan tin 20cm / 8 inches. Chill while you make the filling.
- For the filling simply place all the ingredients together in a blender and process until smooth. Pour over the base and chill for 2 hours until set. Decorate with a little coconut or lime zest to serve.

30g desiccated coconut
90g soft dates, chopped
1 tbsp coconut oil
Filling
2 ripe avocados
1tbsp Udo’s Beyond Greens powder
6 tablespoons maple syrup or coconut syrup
Juice of 2 limes
Zest of 2 limes
1 tsp. vanilla extract
75g melted coconut oil
75g melted cacao butter
