A wonderful breakfast or brunch dish but also delicious as a dessert.  You can use any fruit – fresh or frozen depending on what is in season. If you want to make this for breakfast you can prepare the batter the night before and kept chilled in the fridge until needed.

Peach Batter Pudding

What’s good about it?

Peaches are packed with nutrients including plenty of fibre, vitamin C, vitamin A, vitamin E, and niacin, as well as minerals, such as, potassium, cooper, manganese, and phosphorous. 

  1. Preheat the oven to 220°C, gas mark 7
  2. Melt the dairy free spread or coconut oil in a frying pan (that can be placed in the oven) and add the peaches. Sprinkle over the xylitol and cook over a low heat until the xylitol has dissolved, about 2-3 minutes.
  3. Place the flour, vanilla, cinnamon, eggs and dairy free milk in a blender and process to form a batter. Pour the batter over the peaches. Place the pan in the oven and bake for 15 minutes until it is golden and puffed up.
  4. Serve immediately with additional peaches if wished.

60g dairy free spread or coconut oil

4 peaches, stoned and thickly sliced

3tbsp xylitol

115g gluten free self raising flour

1tsp vanilla extract

1tsp ground cinnamon

4 eggs

175ml Full fat coconut milk or soy milk

Additional peach slices to serve, optional
