A simple naturally sweet breakfast option lightly spiced with cinnamon for a delicious comfort breakfast. Using banana in the batter is a great way to avoid the need for eggs and gives the batter a naturally sweet taste. I like to use thick slices of GF bread for a lovely crisp French toast.

Banana Vegan French Toast

What’s good about it?

Bananas are a great way to replace eggs in batters. They also provide plenty of soluble fibre including pectin to support healthy gut microbiome.

 

 

  1. Mix together the almond or soya milk with the cinnamon, gluten free flour and banana. If wished you could throw all the ingredients together in a blender to create a smoother texture.
  2. Pour the batter into a shallow dish. Dip the slices of bread in the batter for a minute.
  3. Heat a frying pan with a little oil until hot. Add the bread and cook on each side for a couple of minutes until golden brown.
  4. Serve with vegan yogurt and banana slices.

 

Did You Know?

Vegan French Toast is delicious topped with nut butter and coconut yogurt for additional protein and healthy fats. Replacing the gluten free flour for protein powder is a great way to further boost protein content.

 

1 banana mashed

2-3tbsp gluten free plain flour or vegan protein powder

200ml almond milk or soya milk

1tsp ground cinnamon

2-4 thick slices of gluten free bread

 

To Fry: olive oil or coconut oil
