I love Christmas. I particular I love spending time with my boys making homemade sweets and chocolates. We then bag these up to share with friends and family. As my mum is a big fan of ginger we always make some ginger based sweets. This year we are going to include this fabulous recipe – Chocolate Bark with crystallised ginger. This recipe is so easy to make yet is stunning. Break it into small pieces for an indulgent treat and so much healthier than shop bought offerings. Vary the ingredients too – we often add a handful of goji berries or dried cranberries.

INSTRUCTIONS
- Toast the almonds in a frying pan for 2-3 minutes until lightly golden
- Place the chocolate in a bowl with the honey and coconut oil and melt over a pan of simmering water
- Reserve a handful of almonds, ginger and berries if using.
- Spoon the remaining almonds, ginger and berries into the chocolate and mix thoroughly
- Pour the chocolate mixture onto a baking tray lined with baking parchment
- Scatter over the remaining almonds, ginger and berries.
- Sprinkle over a dash of salt
- Place in the fridge to set – this will take around 30 minutes to 1 hour.
- When set break it up with your fingers
- Store in an airtight container

- 350g dark chocolate (dairy free if needed)
- 2tbsp Manuka honey
- 2 tbsp coconut oil, melted
- Pinch of Himalayan salt
- 100g almonds
- 75g crystallised ginger, cut into strips
- 60g goji berries or dried cranberries, optional
