I am a massive fan of matcha green tea – it contains 10 times the amount of antioxidants than regular green tea so is fabulous for a real health kick. Green Tea is also a good source of Theanine helping to improve focus and concentration – ideal for exams for busy days. These are perfect for a pick me up snack or post workout treat too.

What’s good about it?
Matcha green tea is packed with antioxidants including catechins particularly epigallocatechin gallate known for its potent cancer-fighting properties. Matcha powder is so much more potent than using green tea infusion. In fact one serving of matcha is the nutritional equivalent of 10 cups of regularly brewed green tea from tea bags. Matcha is great for supporting healthy body composition and various studies suggest it can boost metabolism and burn fat. It’s also loaded with L theanine which helps boost alpha waves in the brain promoting focus and concentration.
INSTRUCTIONS
- Simply place all the ingredients in a food processor and process to form a soft dough.
- Roll the dough into small walnut size balls then dust in a little matcha green tea powder or raw cacao powder
- Store in the fridge and enjoy

INGREDIENTS
115g /4oz ½ cup cashew nut butter
60g xylitol
1tsp matcha green tea powder
pinch of sea salt
2tbsp raw cacao powder
60g melted cacao butter or coconut oil
1tbsp lemon juice
zest of 1 lemon
30g chocolate protein powder
60g dried cherries or goji berries soaked in warm water for 15 min then drained
½ tsp. vanilla extract
To dust – matcha green tea powder, raw cacao powder, chopped nuts
