Scrambled Chickpeas with Lime & Spinach

This is such a simple savoury breakfast option that can be made in minutes. When you mash the chickpeas down slightly in the spices it creates a wonderful alternative to scrambled eggs. Serve with wilted spinach for a filling breakfast or snack.

Scrambled Chickpeas with Lime & Spinach

Chickpeas are a great source of fibre and protein meaning they help to stabilise your blood sugar levels and keep you feeling fuller for longer.

This would make a delicious healthy lunch option too. Serve with a salad and oat cakes for a speedy option.

Ingredients

 

 

1 x 400g can chickpeas, save a little of the water

1/2 tsp turmeric

1tbsp Nutritional Yeast flakes

Salt and pepper to taste

½ onion, diced

2 cloves garlic, minced

1tsp olive oil

100g baby spinach leaves

Drizzle of lime juice and zest to serve

Instructions

 

  1. Heat a pan over medium heat with a drizzle of olive oil. Sauté the onions until they are soft. Then add the garlic, spices and continue sautéing until garlic is just slightly browned.
  2. In a bowl, pour out chickpeas and a little bit of the water they’re in.
  3. Mash with a fork slightly then add to the pan and sauté until hot.
  4. Add the spinach and wilt, Season and drizzle over a little lime and lime zest to serve.
