These lentil based sloppy joes are rich and flavoursome. The addition of molasses and mustard really gives these a kick. Serve this in rolls or for a lower carb option simply accompany with steamed veggies and salad. This will also freeze really well so you could portion this up in containers with cooked veggies and rice for an easy after work dish.

What’s good about it?
A simple protein packed dish with loads of fibre too which will give you feeling fuller for longer. Using canned lentils makes this a really speedy option.
- Heat a little olive oil in a large saute pan or frying pan. Add the onion and garlic and saute for 1-2 minutes. Add the rest of the ingredients and stir well.
- Simmer uncovered for 15 minutes or until the mixture is thick.
- Serve with toasted rolls and salad.
- For a lower carb option serve with a plateful of steamed vegetables and salad. You can add a little grated dairy free cheese to accompany if wished
