These vivid green waffles are wonderfully light and crispy. Using aquafaba is a great way to replace eggs in vegan recipes. I use the liquid from a can of cooked chickpeas for my aquafaba. Aquafaba can be kept in the fridge for a couple of days or frozen. Matcha green tea powder is wonderfully energising making this a great addition in a breakfast waffle. You could replace the matcha powder for other supergreens or maca powder for an adrenal hit.

What’s good about it?
Matcha green tea is great for cognitive function. Matcha contains a compound called L-theanine, which alters the effects of caffeine, promoting alertness and helping avoid the crash in energy levels that can follow caffeine consumption. L-theanine has also been shown to increase alpha wave activity in the brain, which may help induce relaxation and decrease stress levels
- Simply place all the ingredients in a blender or nutri bullet and process to form a thick smooth batter. If it is too thick simply add a little additional almond milk.
- Heat and grease a waffle iron
- Pour the batter into the pan and cook accordingly to the manufacturers instructions
- Delicious served with almond or coconut yogurt and fruit

125g Gluten Free Flour
1tsp baking powder
1tbsp xylitol or maple syrup
Pinch of sea salt
100ml almond milk
2tbsp olive oil
4tbsp aquafaba
1tbsp matcha green tea powder
