What’s good about it?
A great low sugar dessert rich in healthy fats and protein with the addition of cashew nuts and coconut oil. Using erythritol keeps the carbs low – with only 6% of the calories of sugar, it still has 70% of the sweetness making it ideal for use in cooking and raw desserts.
- Melt the cacao butter and coconut oil in a pan with the erythritol to allow it to dissolve.
- Place all the ingredients in a high speed blender and process until smooth and creamy
- Spoon the mixture into bowls and chill for 30 minutes to firm up.
- Top with chocolate buckwheaties, ctirus zest or berries to serve.
